Date Liquid Jaggery
Ingredient: Premium Wild Dates.
The Gudwala DATE LIQUID JAGGERY is extracted from the Wild Date Palm tree. The extraction is then boiled and thickened, usually in a metal container, on high flame, with constant stirring for 2-3 hours. The flame is fueled by dried palm leaves. It is then manually cooled in the cool morning air, by which time it turns into an amber-gold sticky liquid, not too thin, not too thick. It is then stored in earthen vats to retain the goodness through the next few months. The juice becomes a thick syrup called jaggery which is also called 'Nolen Gur' in some parts of the country. Delicious sandesh and moa are also prepared from nolen gur and people try to store it to consume round the year. Nolen Gur also makes its way into moyas, rasogollas, jalbhora, kanchagolla, the classic sweets. Nolen Gur ice cream, soufflés and crème bruleés are the more contemporary avatars.
