Plain Jaggery
Ingredient: Premium Quality Sugarcane Jaggery.
The Gudwala Jaggery is produced from the finest variety of sugarcanes of the fertile land of Ganga-Yamuna Doab. The process involves 3 steps, Juice is extracted from the canes; The juice is then cleaned in large containers with the help of a naturally grown herb (Suklai), until the sediments sink to the bottom; The juice is then boiled until a dough-like paste is formed which is then transferred to molds to cool.
Ideally, jaggery should have an even dark brown color. Oftenly seen yellow color of the jaggery in the market is due to the chemicals added to change its color and sweetness. Dark brown color ensures pure jaggery.
Not only Jaggery is better than white sugar, it also has a number of health benefits. To call out a few:
1. Jaggery Contains 'Molasses' (which is usually removed while making refined sugar in sugar mills), Without 'Molasses' those white little cubes of sugar are just empty calories. Due to Molasses, Jaggery contains nutrients like Potassium, Sodium, Phosphorus, Zinc etc.
